Comida Mexicana – Tlayuda

The Tlayuda is often called a Mexican Pizza. Or more accurately an Oaxacan Pizza, as it specifically comes from Oaxaca. It’s a seriously filling and tasty dish, and very flexible too, ingredients wise. So long as you have a giant tortilla, baked not fried, and some refried beans, you’re set to go!

But how to get a giant tortilla outside of Mexico? Maybe you have a local shop selling them. Or maybe you can have a go at making one yourself!

4 cups Unbleached all purpose flour
2 teaspoons Salt
4 teaspoons Baking powder
2 tablespoons Vegetable shortening
1 1/2 cups Warm water or more if needed

In a large bowl, stir together the flour, salt and baking powder. With a pastry blender, a fork or your hands, gradually work in the lard or shortening until it is all incorporated. Add enough warm water to make a soft but not sticky dough. Turn out onto a lightly floured board and knead for 5 minutes. Divide the dough into 1/4 cup (3 oz) portions and form them into balls. Roll each ball into a flat round about 6 inches in diameter and 1/8 inches thick. Of course, for a Tlayuda, you’ll want to make giant tortillas, so adjust the ball size as appropriate! Bake them until a little crispy. You should still be able to fold it in half though, without it cracking up into pieces!

Then for the topping. Spread a can of refried beans over the tortilla, and add shredded cooked chicken, pork or beef, or a mixture of the three if you wish! The meat should have been cooked with some chili powder, cumin and spice to your taste.

Add some cheese. If Oaxaca string cheese isn’t available, then mozzarella will suffice. Cook for 5 mins minutes, then add a cup of shredded cabbage and cilantro. Bake for another 5 minutes, until the edges of the tortilla are nicely crispy!

You can serve either flat out like a pizza, or folded in half. Enjoy!
