Another post in my series on Mexican cuisine! And here is a dead easy, healthy and vegetarian option for you! It’s sold on almost every street corner in Mexico City and elsewhere in the country, it’s cheap and it’s tasty! Corn on the cob, Mexican style.
Typically in the UK, corn on the cob is eaten with a thick layer of butter, but there is a better way to do it. Spread a layer of mayonnaise on the corn, sprinkle some grated cheese over the mayo (mozarella would perhaps be ideal) and finally sprinkle a little chili powder and salt on to taste. A squeeze of fresh lemon does wonders too.
